If you grow zucchini in your garden, you're probably up to your ears in them about now... Or if you're like me, everyone else that grows zucchini is trying to unload it all on you. Here's a great breakfast or side dish to help alleviate some of the bounty when you're sick of zucchini bread, grilled zucchini, stuffed zucchini, etc...Zucchini Pancakes
1 large zucchini, grated (about 4 cups)
1 large onion, grated
1/2 cup parmesan cheese, grated
1 tsp baking powder
1/2 cup Panko breadcrumbs
2 cups flour (start with 1 cup and add more as needed)
fresh herbs if you have them, such as thyme sprigs
oil for frying
note: use a medium grate for this, not the very fine one.
Grate zucchini into a large bowl and sprinkle it with a little salt. Let it sit for 20-30 minutes to let some of the water extract. Squeeze out the excess liquid.
Grate the onion and parmesan cheese and then combine with zucchini and eggs. Mix dry ingredients in a bowl and combine with the zucchini mix. Blend well with your hands, removing any excess liquid that builds up and add flour as needed until you have a thick-ish consistency that's not watery.
Heat 4 tblsp of oil in a large fry pan. Drop large spoonfuls of batter onto the pan and flatten out with the back of the spoon. Fry on both sides until golden brown. Serve with sour cream, salsa, or hot sauce... or all of the above.
