Cereal is probably my go-to meal when I don't have to worry about feeding Pollbaby. Easy peasy.

hells yeah.

also, brown rice and black beans. I have a rice cooker so I usually make a batch at the beginning of the week to keep in the fridge. from there, take out enough to saute for a quick meal using any combinations of the following:

olive oil, soy sauce, siracha, tomato, garlic, onion, peppers, zucchini etc.

also, when its almost done, make it into a volcano shape, and throw a scrambled egg or two in the middle, then mix together for egg fried rice.

And brown rice and black beans is bomb, as is brown rice and corn. When my rice is almost done cooking I add a can or two of corn in there. Save and eat all week.

when i'm too hungover or tired to cook real food, i reach for anything cheesy or potato-y, nothing remotely close to a balanced meal. on a sunday afternoon after a rough night, i'll literally sit and consume half a box of Mrs. T's with a heaping pile of sour cream.

also:
french fries with lots of vinegar (boardwalk fries)
mac and cheese
grilled cheese
blt... when garden tomatoes are plentiful
potato pancakes
heaping piles of nachos
