see, i don't bake much, but i need a silpat for when i make meatloaf... it always ends up sticking to my baking dish, no matter how much i grease it up first.

plus, silpats prevent the bottoms of your cookies from burning, which is the number one reason i don't bake cookies anymore. damn things always burn.

get some farberware or jelly roll pans- i've never burned a cookie on em. jelly roll pans are the only thing that have ever given me a perfect pumpkin roll. i love em.

puncturing the meat with a fork permits the juices to escape. tongs are much better.

I guess your right, but I haven't been the one cooking steak lately .. and he uses his fingers to flip them

hmmm ..why do you have to grease a pan to make meatloaf? I usually dump a bunch of extra bread crumbs in the meatloaf because it can be too greasy with the pork and chicken and beef mix
