well... the first batch i let ferment for 2 weeks. originally, it was 3.7 (just the base ingredients) - but i added peaches in corn syrup and 2 cups of brown sugar to it, which together hiked it up to 6% in two weeks. i bottled almost all of it, but i figured i'd give a little bit of it some extra time (1 week) in the fermenter. and boy, those two last bottles are strong as fucking hell. maybe 7-8%. almost smells wine-like.
